He is a medical doctor and chemist, who is now also a distiller and founder of Underground Spirits.
This new Canberran distillery, located in Kambah, has only been operating since the beginning of 2017, and their locally-produced vodka and gin are already winning awards.

“As recent winners at the Melbourne International Spirits Competition; a gold and silver medal feel really wonderful.”
Toby’s science and medicine backgrounds inspired him to invent a sub-zero, sub-micron filtration process that helped create the gold medal winning vodka.
Using water from the Snowy Mountains doesn’t hurt either.
“We are very proud to have received this gold medal the first time we have entered our spirit to be judged, and to actually win is fantastic.
“The appreciation for premium vodka is growing and it is a great feeling to be leading the way.”
Meanwhile revealing some of the secrets behind their silver medal winning gin, “maceration, vapour infusing and tinctures are the processes we use to create the gin, all specifically considered to show off the Australian botanicals that have gone in to make (it).”
All gin is based on the juniper berry as a compulsory ingredient, but there is a vast number of variations on the theme.
“We treat juniper as king in our gin, but the botanicals take you on a journey. The mix includes coriander seeds, angelica root, poppy seeds, Tasmanian pepperberry, black pepper, cinnamon, lemon myrtle and basil grown locally in Canberra; a journey into the uniqueness that the Australian botanicals can bring.”
Dr Angstmann has built a dedicated team to produce some of the very best spirits possible.
Andrew is described as “the bloke pouring your drinks when he is not hard at work making them. He will influence your world via his creative flair and appreciation for the spirits.”
Ross, meanwhile, “delves further into the passion” of making spirits and “he will enjoy sharing his knowledge with you; right after a hand-stirred martini.”
Ana, whose favourite is vodka espresso martinis, “powers through the copious number of tasks thrown in her direction. She also packs a mean botanical basket.”
Plus there’s also Claudia, who “brings a level head for business and a passion for gin. You will be waking up when she is going to bed. A lifelong multi-tasker and dedicated to all things Underground Spirits”
Justifiably proud of their early achievements, they say “it is an exciting path to be going down; we are showing Canberra off to the world.”
